In 2012 I created a sourdough starter in my kitchen in McKinney – the same starter I still use today. I bake each loaf by hand using unbleached, unbrominated flour and no preservatives. Because the natural lacto bacillus in sourdough converts flour differently than commercial yeast, my bread doesn’t cause the same insulin spike and is great for gut health. I focus on quality and consistency: every loaf has an identical crumb inside, with the only variation being the colour of the crust. And despite having no preservatives, my bread and bagels stay fresh for almost a week in an airtight container.

Growing up on Long Island, some of my earliest memories are walking to the bagel shop with my dad and grandpa. Those trips inspired my Sourdough New York Bagels. Hand‑rolled, boiled and baked, these bagels use a secret flour and my sourdough starter to deliver the chewy texture and shiny crust of a true New York water bagel with the tang of sourdough.

Responding to the growing demand for gluten‑free bread, I’m excited to introduce my new Gluten‑Free Sourdough Bread. I created my own gluten‑free sourdough starter from scratch and developed an entirely new recipe so people with dietary restrictions can enjoy real sourdough. This loaf replicates the flavour and texture of regular sourdough while using gluten‑free, unbleached, unbrominated flour and contains no preservatives. As with all my breads, every loaf is baked fresh by hand on market day, and customer feedback helps me refine the recipe.

Inspired by my Long Island childhood bagel memories with my dad and grandpa, these bagels use a secret flour and my sourdough starter to deliver the authentic taste of New York water bagels with a sourdough twist. They also stay fresh for days when stored properly.
  • Gluten‑Free Sourdough Bread – built from scratch using a gluten‑free sourdough starter I created. This loaf replicates the flavour and texture of regular sourdough for those with dietary restrictions. It’s made with gluten‑free, unbleached, unbrominated flour and contains no preservatives.
