In 2012, I created a sourdough starter in my kitchen in McKinney. It is the same starter I still use today. I can only get more local if I grow my own wheat.
Every loaf is made by hand with unbleached, unbrominated flour and no preservatives. My focus is quality and consistency: the crumb, texture, flavor, and process are dialed in so each loaf delivers the same experience every time.
Sourdough is not just regular bread with a different label. Long fermentation changes the way the dough develops, giving it deeper flavor, better texture, and the kind of bread many people find easier to enjoy than standard commercial yeast bread.

Sourdough New York Bagels
I grew up on Long Island, and some of my earliest memories are going to the bagel store with my dad and grandpa. When I got into sourdough, I wanted to create a bagel that tasted like the ones I remembered from childhood.
These are hand-rolled, boiled, and baked for the chewy interior and shiny crust of a true New York-style bagel, with the added depth of sourdough. I use my own starter and a flour approach I keep private.
Gluten-Free Sourdough Bread
The gluten-free sourdough came later, after customers started asking for it. I did not want to make something that looked and tasted like cardboard. I wanted to build a real gluten-free sourdough experience from the ground up.
That meant creating a completely separate gluten-free sourdough starter from scratch, then developing a recipe around it. The goal is simple: give people who avoid gluten something much closer to the flavor, structure, and satisfaction of regular sourdough bread.
Allergy note: the gluten-free sourdough option is made with a gluten-free starter and gluten-free ingredients. If you have celiac disease or a severe allergy, contact me before ordering so we can discuss your needs and whether my process is appropriate for you.
